I think the balance of gore has a good balance between, "oh I hit them," vs "blood more blood!" I have 2 kids and a wife, it's nice not to worry that I need to hide away while playing.

Haven't heard any language, and honestly I hope they don't put a bunch of modern cussing in. That honestly ruins the immersion for me. "Hey its medieval times! Let's drop f bomb and sexual inuendos that don't exist!" Always ruins the feel, seems forced, and adds nothing.
