I play as knights and i would love to see a swords man type of unit. Sword and shield you have a similar unit but i dont like his main weapon and he looks fat and unfit for combat in a real world aspect.

the vikings are having a spear guy and the knights a halberd guy

The conq is already shield+weapon but as others have said something like a halberd would be amazing!

Vikings have both a sword and shield and spear and shield character, so look forward to that! I also don't much care for the flail, would have preferred a mace or warhammer. Still, Conq is my jam!

No you cannot, every hero is tied to their respective weapon. You can change how that weapon looks, but you can't change the weapon for another weapon.
