Hello. I am also using Radeon 7500 to play POP SOT. Got the same problem as other players: static fog overlapping all over the screen, which won't go away no matter how I set up the POP Graphic config.
I see people suggest to use the 3Danalyse to solve this problem; But I would like to propose a completely different, but much simpler, solution.
It's not that 3Danalyser doesn't work. It works pretty fine, except that:
Primo. 3Danalyzer slows the game considerably. Furthermore, if you use XP, you have to setup this application to run in 98 mode. And you'll still get warning + possibly error msgs.
Secundo. The color is washed-out; you try to dim your monitor to match the brightness, but it only degrades the visibility.
Tertio. The upper-left quarter of the screen kind of display weird scenes. You get rid of those static fogs but in return you have to loose your quarter of pleasure? No, thx.

Now here goes my alternative:
1. After installing POP, go to graphic configuration screen (Options -> Graphics) and set Special Effects to low. You may leave other settings, but I turned off water effect and this gave me back clear, almost transparent, water which I'm enjoying very much.
2. Try playing the game. If no static fog is shown, good. Play and enjoy yourself.
3. But you'll probably see those "fogs" again, as soon as you try to play POP next day. If that's the case, quit the game, and delete the following preference files (with your own user name in user_name):
C:\...\UBISOFT\Prince of Persia The Sands of Time\Profiles\DefaultProfile.DAT
C:\...\UBISOFT\Prince of Persia The Sands of Time\Profiles\user_name\Profile.DAT
4. Restart POP. You'll see all-white screen again, as if you just re-installed POP, asking for a new user registration. Don't panic, you can get all your saved games back: Register the user(with which you were playing) with the same user_name, Then go to graphic configuration screen. Reset prefs exactly as the step #1 above.
5. repeat step #1 through step #4 whenever static fogs appears on your screen.

What version of the Catalyst drivers are you using? The fog problem was pretty common on Radeon cards until ATI came out with the 4.1 drivers which sorted the overly-thick fog and water effect related white boxes out.
If you dont have version 4.1 upwards then i would recommend getting them so you can run the game with max special effects if your card can handle it.

Catalyst ver.4.2.
Did not solve the whiting problem, unfortunately. But this doesn't matter now.

Oh well, too bad the drivers alone couldnt help you but at least you have a solution others can follow now
