I have 2 platinum medals but the platinum knight said I have 7 platinum medals

Do you have the donkey or the agent bike? Plats made with them would not show on the map but might still be counted.

Also any plats on the 3 pvp tracks would not be visible either.

Given that you only have two visible though you arent very far along in the game so the agent bike seems the most likely
