Let's be realistic here, if we stick to the time period with a few hundred years inaccuracy and taking the technological level into account, the factions we could see are and are visually interesting (imo):
Byzantine warriors
Sassanid warriors
Mongol warriors

Although most likely they can't replicate their martial arts so I don't see much chance for it to happen.

3 is fine to begin with. It brings enough differences between each factions to make the gameplay unique.
