I have the same issue, and after an hour online with Ubi-chat guy, he ended up telling me to upload a video of the problem (like I'm making it up) and wait for an update... I actually like the game, just lemme finish it!!!
nothing changed after todays update

Hey folks, I am sorry for the continued issues with Poseidon during both quests. Our team is still investigating this issue moving forward. To collect some further information for our team, please make sure that your latest save files are uploaded to the Cloud (you will see a cloud icon on your save slot). Please keep me posted here once you have ensured this and thank you for bearing with us in the meantime.
I am having the same issue in this location with poseidon not interacting (but there's only one). I also just got an update today on the switch. I was already in the winter area and poseidon went back to olympus after a quest... Maybe that's what's triggering the glitch?
Here are the things I tried, but which did not fix the issue. I went to my quests list in the map and selected other quests and then reselected the dumb as a rock quest. The quest icon still does not show up over poseidon at any location. I tried doing the day night respawn at an alter. I saved a few times. Went to other areas and came back. None of these things fixed it.
If you're experiencing this, can you please upload you save from the in-game menu, and let us know when this is done.
We can then use these in our investigation
