Depends on how much health and DPS you lose and what stats are effecting the DPS drop, and if you are getting a four piece bonus for the trade.
Got 2 nomad and 2 strikers so far so no 4 piece bonus lose about 35k health and 50k dps when gs is high, gain it back when my gs is lower to 178 from 185
GS does nothing on its own, use the best gear you have to have the highest main stats
Edit: also 2 piece nomad does nothing, scavenging is currently broken.
The nomad I have equipped as they give the best dps and health at the moment u till I find somthing better
Make sure you are comparing ALL stats on an item, not just gear score.
If the Set piece gives you a nice bonus, add it to your current loadout. If it isn't, drop it into Stash and hang onto it for a while. You might craft or loot another piece that is the same, you can then compare the 2 of them and keep the best one while deconstructing or selling the inferior one.
Once you have set pieces that have the stats that improve what you currently use, then you can swap them out.
I would honestly suggest storing all set gear until you have a full set of one. The gear we got from farming challenge modes is sooo much better then the gear sets unless you're my husband which has three pieces with over 1k armor to each and they are all +health/dps. Lucky sob!
Don't worry about gearscore at all. The score on gear is basically like an item level. The higher the gearscore the higher the stats can roll. Having a gearscore of 220 means nothing if you have low hp, have not hit armor cap and have no crit chance or crit hit damage.
Here are a few tips for what you are looking for if you plan to dps with guns (this does not apply to sticky bomb builds or heal builds)
1. Gloves - You want these to have crit chance crit damage and weapon damage. Since SMG's give the best overall DPS you may want SMG damage on these. Since the chance on getting these rolls on set gloves are close to impossible, I recommend crafting high end gloves with the savage perk. The savage perk increases your crit chance by 14% against targets out of cover. Gloves are the highest dps boost you can get as far as any armor piece goes.
2. Weapons - For the best overall damage on an SMG you want brutal(increased headshot damage) Deadly(Increased critical hit damage) 3rd perk is up to preference. For PvE Destructive is nice for the enemy armor damage, however it is useless in PvP. I have self preserved as my last perk(Critical hits heal the user for 3% damage dealt). With the high base crit chance of an smg plus boosting your armor with as much crit chance and crit damage as possible, you will always be healing yourself. Don't go crazy trying to get this roll, it's super hard to get and I got very lucky.
3. Chest - I recommend armor, mod slots and whatever you feel helps you more. I like health on kill or exotic damage resilience. If you don't have a set chest I highly recommend a high end chest with reckless perk.
4. Mask - Crit hit chance as major perk
5. Knee pads - Armor and critical hit damage as major
6. Backpack - Critical hit damage as major
7. Holster - armor
As far as perfect rolls go, you want those attributes I listed as major and want skill attributes that match what you are using. For high DPS builds, I feel pulse damage and duration are best. For secondary, it's up to you. Ammo capacity is nice, shock resistance is nice for PvP. Enemy armor damage is nice for PvE.
Please keep in mind this is a balanced build for PvP and PvE. If you don't care about PvP you will want to stack lots of elite damage and enemy armor damage. Just remember those two stats do nothing in PvP.
For me, I am waiting on a sentry back pack. Once I have that my plan is 4pc sentry with recless chest and savage gloves.
Gs IMO, is a vanity number, I have a higher number than you type of thing.
I have gone back to running some high end armor and its only gotten better. More dps and firearms, more health and stamina and better armor mitigation.
I was running 4 striker and one sentry, with only high end gloves, but have since changed my build to only 3 striker and I like it better.

My next question is shall I put on my 4 piece striker set and lose 60kdps and 30k health or is it just not worth it
I don't know how high the armour goes for the chest but mine is 1400. Now I find this odd since when I first got it it was just under 1200 and I have not changed anything , have not rolled it or any thing. It just seems as my DZ lvl goes up so does my Chest armour.
I can have my GS up to 208, but I run at 196 as my talents and gear crap all over my higher GS stuff.
203k DPS with my SMG, 147% crit damage, 54% crit chance (without savage), 197% headshot damage, 29% armour destruction.
210k DPS with AR with a lower crit chance, but higher headshot damage.
Currently have 2 striker, 2 sentry, and 1 tactician (want to get rid of tactician but I don't have a better holster). If I can get a better chest with reckless (current reckless chest is too low level) I'll go that for some extra damage and resistance.
