The Creed, "Nothing is True, Everything is Permitted" roughly is meant to get Assassins thinking about developing their own morality and not letting it be spoon-fed to them by society.

The Assassins do terrible things, murder usually, in order to protect free will and the only reason they don't become monsters is because they're committed to their own morality and avoid hurting the innocent.

Shay, by turning against the Assassins on Moral Ground to protect the Innocent, is the most Assassiny Assassin of them all.

Juhani totally misses this when he says Assassins will choose order over freedom when backed against the wall.

Instead, Shay shows Assassins will know even the Creed is not true at times and his pursuit of freedom means turning against the Mentor when his ideology conflicts.

Well every protagonist in the series so far except maybe Arno have questioned some part of the Creed. And most have found there answers and become even more devoted as Assassins. Shay is the first to question and not find an answer that satisfies him. As for Juhani, his whole plan was flawed in my opinion and doesn't make alot of sense. What you just said in your op is the reason why his plan doesn't make any sense to me.
