I didn't found any aswer to this on forum so I will ask here:
Why they replaced Hidden gun with pistols?
Hidden gun reloaded faster, it had more ammo and it was HIDDEN. It was much better.

2 ideas why

1. Barrel
A barrel is a part of a gun. It is a long metal tube that the bullet goes through after it is fired. Guns can have many different sizes of barrels. Usually, longer barrels mean that the bullet will hit the target more often.

2. Combat
With hidden gun u had to use both arms with pistols u have one arm free.

as personal opinion, at AC3 time settings, guns and muskets were commonly used unlike previous ACs time settings, so it didnt make sense to have a hidden gun and gun, so to make it more realistic, they opt to switch it with the latter, if u ask me, i would definitely prefer the hidden gun.

Over the years that he owned the Hidden Gun, Ezio also improved his own skill with using it. He eventually did not need both hands to align his shot, and learned to dual-wield the Hidden Gun with several different weapons.

And additional information on this issue why it got replaced:

Though it was an excellent weapon for assassination from afar, it would give away its user immediately after firing, due to its loud discharge and smoke.
