If I have understood it correctly radiator is for taking in coolant air. So what is the point keeping the radiator anything but fully open?

There are several forces acting on any aircraft:

Thrust, Gravity, Lift, and Drag

Thrust is taken care of by your engine
gravity wants to pull you to earth
Lift make the plane flt even though it's heavier than air
Drag wants to slow you down

The wider the door for the radiator is open, the more drag you experience.

Take a canoe paddle, and swing it with the thin part forward

Then take it and swing it broad side forward

The rad flaps and doors are a compromise between cooling the engine and streamlining the aircraft
