Hey all assassins! There will be a new game engine in AC3 called Anvil NEXT. My question is, what exactly is Anvil NEXT?

Here, let me explain:
AC1, AC2, AC:B, AC:R: Anvil 1.0
AC III: AnvilNEXT or Anvil 2.0

As in the AC1, AC2, AC:B and AC:R used the game engine Anvil 1.0, while AC III will use an entirely new engine called AnvilNEXT

Your kind of right. AC1 had the scimitar engine which was a primitive version of Anvil

It's a game engine.

Every Assassin's Creed game has used the Anvil Engine (it was named Scimitar when AC1 was released, but whatever), but for Assassin's Creed 3 they have upgraded and updated the engine. It's essentially Anvil 2 or Anvil 2.0, but they decided to name it AnvilNEXT.

AnvilNEXT added weather cycling, larger amounts of NPCs on screen at once (they can render 1000s of NPCs onscreen as opposed to the 100s they could render with the old engine), improved visuals, improved AI, dynamic water simulations, snow deformation and a bunch of other stuff.

It isn't just a minor graphical jump, it is a BIG jump in terms of everything, 2 things I will include are a 1000 man battles and weather.
