it seems that sometimes I can really yank on my 190 a-8 and other times it stalls very easily...I'm wondering if the elevator trim setting can play a big role in this?

I don't see why. Mainly speed, altitude and loading would determine when you stall.

Though, if you have a really severe nose-up trim, it might cause you to accidentally overcontrol and stall more often.

Elevator trim wont, but rudder coordination can make a difference especially in hard turns or at low speed.
