Noticed in some of the videos what appear to be, catapults on carriers. Is this only "eye candy" or will they really work?

The catapults were used on the small escort carriers for planes with heavy loads.

Yes, the Wildcat launched from the CVE, while the SBDs took off from an Essex class CV.

The CVE is the Shamrock Bay, a Casablanca Class.

The CV is Intrepid.
