Stalls yes to a point (when you see condensation lines on any planes wingtips they are potentially near a stall) but simplified (the AI routines would otherwise be too complex for any normal computer) and blackouts/redouts no.

I saw an AI Bf109G2 stall out and crash a few days ago (in Il2 Original). This followed a dogfight in which an AI G2 lawn-darted whilst the pilot was looking over his shoulder watching me. I guess they save the smart pilots for the G6 http://ubbxforums.ubi.com/images/smiley/16x16_smiley-happy.gif
