I keep trolling these forums for insight in sub gaming.

Up until now I have assumed my misfortune has to do with duds. However, what depth setting should I be using? Most of my attempts have been surfaced (UZO), some via periscope. I believe in all cases I left it alone at 4 metres.

You have to either shoot at a depth were the torpedo will impact at an angle of as close to 90? as possible or if you want to use the magnetic pistol you should set them to about one meter below the draft of the ship you're shooting at.

If you set the pistol to I+M for Impact + Magnetic, they'll also explode when running underneath the keel of a ship, which can cause more damage.

You're probably running them too deep or they're bouncing off because they're hitting a bad angle on the keel. 4m is deeper than most if not all destroyers anyway.

I've heard setting them 1m deeper than the keel of the boat you're targeting is good. Consult the recognition manual for ship drafts.

You can see what your target 'draughts' (how deep it sits in the water) in the recog manual. From there, its a pretty simple plan - if you set the torpedo to use its impact detonator (the 'I' setting on the one dial on the F6, or TDC view) then make sure the torp is set to run at a shallower depth than the targets draught. If you plan on using magnetic detonation (the other option, 'M' duh!), then try to run the torp about a meter under the target. I normally leave the setting to 4m, as I ALWAYS use impact detonation. The bugger up comes when attacking a destroyer - remember to set it lower then, they draught much less than transports! Also, in very rough seas a torpedo can actually pass under a heaving ship if you're VERY unlucky and you had it set to impact running just shallower than the targets draught!

In hindsight I think it was a combination of AOB and the torp depth. I read the matter in the manual but assumed the Weapon's Officer took care of it for me.

Now back at base looking over my upgrade/transfer options. Next to figure out manual targeting!
