I don't think you can. You can turn them off in the control panel, though. At least you can on the X52.

this is from the description on the saitek site

The MFD screen, first introduced on the X52 Flight Controller, is now interactive. Now you can display important in-game information such as the Radio Stack and interact with your games directly. Shipping with support for Microsoft's Flight Simulator X, there's also a Software Development Kit (SDK) included which allows budding programmers to create interactions with their own favourite games. See what's been created already on our forum.

Chose between night-friendly red, green or amber illumination for the different LED buttons on the controller. Using the SDK, you can also program the LEDs to react to conditions in your game such as flashing red during a stall or changing colour when pressed. Now there's a huge number of possibilities for even greater interaction between your controller and the simulation.

A pain in the arse to do
saitek forum (http://www.saitekforum.com/showthread.php?t=10796)

At the moment there's no easy/proper way to change the LED colours - the next version of the drivers and software will include a utility to set the colours of the LEDs globally across the combo.

For the time being, browse to the C:\Program Files\Saitek\DirectOutput\SDK\Samples\OutputTest directory on your PC and run the OutputTest.exe file. With this you can change the illumination status of the LEDs on the stick and throttle - to get Amber just turn on both the Green and Red LEDs for that button.

Do bear in mind that as soon as you close this application everything will default back to green - the same goes for if you use the Flight Sim X plug-in because the Flight Sim X plug-in has all the LEDs set to green in its code.

This is why I said "globally" in the first paragraph - the new utility will be able to override plug-in specific LED colours if you want it to.

Incidentally, if you write your own plug-in you also have full control of the LED colours and illumination status - therefore it is possible to make the LEDs react to in-game events.

Do you have the programming software installed? If so you should see that in the programming utility you have the ability to program buttons to have six different functions. Mode1, mode1+shift, mode2, mode2+shift, etc. All you have to do is program what you want into the different collumns and when you load the profile you can switch modes with the mode rotary and change what the button does. Does that make more sense?

As for making the display show ingame things, you have to either download a plugin that someone has made for il2, or use the sdk and program one yourself (easier said than done unless your a programmer).

I think that's the flight controller for Ace Combat, judging by the words 'Ace Combat' on the joystick's base.
