I've noticed that when hit a plane can produce black or white smoke. Why two different colours?

Generally, black smoke = oil system damaged (Major engine damage imminent). The white smoke that you refer to usually is just a fuel leak. It's semi-transparent and in some planes it will stop after awhile (self-sealing tank-equipped planes), others you "bleed" until you either make it home or watch the prop stop.

And if your refering to the puffs of somke at the moment you hit them thats just dust and smoke and junk
