Wide view and the shift+F1 view are the only means to get the wider or outzoomed view.
The Shift+F1 view is a bit different for each plane....dont know why. This gives some planes a tiny improvement in combat.

One Example: The early p40, and it can also open the hood and thus get rid of a few bars above. This makes it almost equal to a 109 from same year.
The shift+F1 view also improves the bad vis in the il-2 wich enables it to take part in limited aircombat.

90 degrees is the limit. Oleg has said that they wont support wider fields of view because current GPU technology is already suffering too many clipping problems coping with 90 degrees (you can see through the wing roots of the 109's in wide view for example).
