accerlate slow, pull throttle to zero when starting engine and keep nasty bullets out of it....

Throttle gently, 1-2 seconds per 1000rpm, until 6000rpm. Then you can firewall it.
Don't go below 6000rpm in combat, you don't need it.
At landing throttle it gently in 6000-0rpm range.

To clarify the "accelerate slowly" advice:

You want to handle the throttle in the 262 so that you have no more than 10% increase or decrease in the throttle percentage every 2 seconds. Handling them like this will almost guarantee that they won't catch fire or flame out, at least, unless you're shot.

Also, check your control bindings and make sure that you're actually starting both engines, and controlling the throttles on both. There are entries for "select engine 1/2" and "all engines" in the controls section of FB.
