Wich one is best to buy to convert a gameport fighterstick and throttle to usb (or simped vario gameport to usb ?).
What are differences ?

I've converted a Suncom SFS Throttle from gameport to USB by using Leo's BU0836X board. It is really easy to connect the cables to it,but the largest setback for me was placing the board inside the large SFS' base due to board's size.

IMO - For your purposes is more practical to use the A version.

The X version made easy to plug wires, but result in more wires to hook between stick and throttle.
Using the proposal matrix for A version made wiring easier. http://forums.ubi.com/groupee_common/emoticons/icon_smile.gif

Or use one BU to each control...

Edit - In fact one BU dont have suficient buttons to CH PRO Throttle (20) plus Fighterstick (16 + HAT) = 36 plus HAT(8 way). BU0836 alow 32 plus HAT (8 way).
But have axis to Fstick (3) CH PRO Throttle (1) and Simped pedal (2). Use the spare 2 for rotaries in throttle.
