And it wont start once it has stopped. Can't cut the throttle back any either because the engine will stop.

The jets in this game are VERY touchy, just like the real thing. There are very narrow ranges for operating the engines, and they change with the airspeed. The YP-80 is relatively mild, the Me262 likes to burst into flames if you give it too much gas. http://forums.ubi.com/groupee_common/emoticons/icon_eek.gif

Be gentle on the throttle. Try not to do as many high angle of attack manuevers all at once. If the engine does quit, nose down and try and gain at least 250kph before restarting the engine...give it 15% or thereabouts throttle and pray.

My old Logitech Wingman Extreme Digital 3D (it raises the question why not just call it the Digital 3D? :P) throttle wore out, constantly jumping around adding or removing about 5-3% power. I remember I used to fly the Me-262s for about thirty seconds before the % would change in a really bad increment and I'd be burning like a petrol flavoured birthday cake.

Be gentle on the throttle, take your time and change it slowly. Something like 5sec for 0-100% should do it.

Do it:

From 0 to 100% in P-80

From 0 to ~50% in german jets, above that you can slam the throttle around (check it it's over 6000rpm)

P-80 just quits when throttling too fast. Germans burn, if you increased throttle and quit if you decreased it.
