If you are heading toward or away from a searching enemy destroyer is there less of a sonar signature, than when you are giving him your Port or Starbord profile?

If so is it modelled in the game?

Yes, there are formulas for Aspect modelled into the game. After analyzing them, however, I felt they made an error in the formula. Without feedback from the devs, however, I cannot be certain.

I would have to say no, it's not modeled, as I've had escorts zero me when I've got my centerline facing them, and I've had them go right over me and not find me when I've been sideways. I will say depth seems to make a huge impact. At 130m or lower they can't seem to find my IX in late '42, even with engines running at slow.
