Is there a way to use these just hooked up to my gameport in windows XP? Or do I need a gameport joystick to go with?

You don't need a gameport stick, just make sure the sticks software package supports gameport rudders. You can't use more than one gameport devise to start with, windoz has never supported multi-gameports.

Some sticks will allow you to plug the rudders right into the stick itself, will see them automatic if they are working.

See if you can get a gameport to USB converter. I have the thrustmaster elites, and with the converter, they work fine on my xp machine, and I always had problems with gameport stuff.
