I really want to publish my gameplay but can't for the life of me find any way to even replay it, let alone publish it. Any ideas, short of buying a recording device?

Im going to assume you already know how to record gameplay with the Xbox One built in DVR.
If not, here is a guide: http://support.xbox.com/en-US/xbox-one/apps/upload-game-dvr

Here are 2 ways to get the video file that you want to publish:

1. Upload your video to: https://onedrive.live.com using the Xbox One upload studio app.
When you choose the "upload to one drive" option in the app the video will be uploaded to that website.
Get on a computer and sign in to onedrive.live.com and find and dowload your video.

OR

2. Go to http://xboxclips.com, enter your gamertag on the top right and download the desired video from the list.

Now, once you have downloaded the video file, go to www.youtube.com
Create an account, and upload the video file. Once it is uploaded you simply hit the publish button.
Now your video is on the internet for the whole world to see, congratulations.

edit; no point in repeating exactly what Rob wrote above lol

+ The 2nd option of using xboxclips.com is the easier way to get them onto your pc hd,
If you didn't share it specifically to Onedrive from the Upload Studio App it won't be there,
But all vids will be in XboxClips, even the automatic ones, Searcing your GT right now will show you everything captured already
After GameDVR use Upload Studio to crop, add text, effects, and share!
